Using 60-0-60 transformer & lm317s as variable pwr supply

I've a great 60-0-60 transformer from a mobility scooter power supply plus a bag of LM317 regulators and wondered how I can marry them to make a variable power supply. Any suggestions very welcome :D

What sort of outputs are you looking for? What voltage and current ranges?
