Coffee Urn Heater too low

I have a 30 cup urn that brews coffee well. The problem is that when it is done brewing it keeps the coffee at approximately 145 degrees F. I would like to make it keep at around the 190F mark. Replace thermistor perhaps?

Do you think I could replace the existing thermostat with this one? It connects the same way.

That is a dryer thermostat for measuring air temperature. I should not think it would be much good for measuring water temperature
