PWM on AC pump&heater using Arduino

PWM on AC pump&heater using Arduino

Hi, I'm working on a project where I will be using an Arduino to control the pressure of pump and the heating temperature of an Nespresso machine.
Its a Magimix M100 and will be running on UK Mains 230V 50Hz
Pump 60W
Heater 1200W

Right now I'm thinking of using a diode bridge and mosfet to do PWM since the pump rectifies the signal anyways.

I'm having troubles on which MOSFET I should choose as well as all the necessary passive components that is required to make such circuit work. Please give me some advice, would choosing something like IRF740B/IRFS740B https://www.fairchildsemi.com/datasheets/IR/IRF740B.pdf work?
If so what values should I be careful with? And also would my circuit work at all (I think I need to add some resistor&capacitor on the collector of the optocoupler but not sure how)?

edit: the mosfet in the diagram is suppose to be a N-channel enhancement MOSFET, accidentally chose wrong symbol

I looked around to find an optocoupler whose internal transistor could withstand peak mains volts (325V), but found none. But I did come across this opto-coupled triac driver that may be suitable. You could use it to drive a suitable triac.
