Crock Pot Distillation

Crock Pot Distillation

I am attempting to convert a crock pot into a small distillation unit for extracting essential oils. As such, I need for the temperature switch to run on unfixed positions so that I can adjust the temperature. Currently the cord connects to a switch which allows for the unit to run one or two heating elements. I would like to run both elements together full time and be able to control the temperature output. The crock pot is a Rival 3350/2 with the following specifications...
180-250 watts
120 V 50-60 hz AC only
If possible I would also like to get a touch more heat out of the unit. It currently goes to about 187 degrees F and I would like to see it reach 200.
My question is, what sort of switch would be appropriate for modifying the unit thusly?

I am not a regular electronics meddler, just on occasion, so please speak newbie to me. :)
